But with plenty of “ulam” served during these events, chances are there will be some leftover portions of lechon.

To those who are not familiar with “lechon”, it is a butchered pig that’s stuffed with a bouquet of spices and seasonings like lemongrass, salt, garlic, black beans and basil. Before it is roasted, the pig skin is rubbed with mix soy sauce and vegetable oil. And it roasted for up to 5 hours or more depending on the size of the pig.

The lechon is scored with its golden brown skin indicating that this is ready to serve. Honestly, the most tasty part of lechon is the ribs and belly because aside from less fats, this is the portion where flavor is concentrated.

From the name itself, it sounds delicious and nutritious. This type of lumpia is mixed with shredded carrots, sliced cabbage and lechon rolled over and deep fried. This is best served when fresh from the frying pan so don’t let it cool for too long.
