The Philippines inspired restaurant, Gallery By Chele, is a restaurant in BGC, Manila that claimed the 90th spot on Asia’s 50 Best Restaurants premier edition of 51-100 List for 2021! Owned by Spanish Chef Chele Gonzales who partnered with Chef Carlo Villaflor. It is the revamped restaurant of Gallery VASK that simply drops the pretensions and provides raw, culinary movement that are characterized by locally sourced, seasonal ingredients that are presented in a less intimidating, bistro-like fashion.
Asia’s 50 Best Restaurants is an organization aimed to recognize and support restaurants of all types and levels across Asia especially those who have had a positive impact on their local culture, cuisines, and communities, whether it was during the recent crisis or over a sustained period.
The announcement came when the local restaurants industry was facing the difficult challenge and the surge of COVID-19 cases in the country with Manila prohibiting establishments from offering indoor dining and only 50 percent were allowed for those offering dining outdoors.

“All of us in the restaurant industry continue to deal with the shifting realities of the pandemic. We not only have to figure out how to keep our restaurant, families, and guests safe but we also have to ponder how to keep the business side of our restaurants moving forward. It has been a challenge, to say the least,” says the chef and partner of Gallery by Chele.

The Gallery By Chele
Gallery By Chele is a revamped design of Gallery VASK of 2013, which was Chef Chele’s award-winning restaurant that was ranked as high as number 35 on this list of Asia’s 50 Best Restaurants of 2017.
The design and menu options were the fruit of the collaboration between the European Chef Chele Gonzales and Filipino Chef Carlos Villaflor and the rest of the Team Gallery who welcome all those who love good food and good times.
Their philosophy is about exploring the Philippines and Southeast Asia in order to continue the legacy of research, documentation and analysis of flavors and techniques that can strengthen the soul and personality of the gastronomic culture of the Philippines.
Every year, the Team Gallery embarks on numerous trips to search for new examples of culture, tradition, nature and textures in order to translate them into flavors that can be used for future improvement and growth of their menus.
Restaurant Design
The Gallery is an organic and cozily designed restaurant which were made by partner-owner architect Carlo Calma who used warm wood textures for the Gallery’s interiors with the furniture concepts made true by Kenneth Cobonpue. They took these casual elements and raised them higher by offering extensive and delectable menus.
Menu
The Gallery by Chele offers a-la-carte options for diners to have a fun, relaxed and memorable experience. Their menu is a product of their explorations around the regions of the Philippines and Southeast Asia in order to discover the intricacies of common local ingredients.
They commonly delve into the traditional cooking methods done by farmers, fishermen and home cooks which are all about learning the practices and traditions that have already become lost to the modern world.

Black Bombs are infused with squid, burnt garlic emulsion, and togarashi/shichimi.
Paella de Pato y Setas
The Paella de Pato y Setas is traditional paella rice dish that uses smoked duck, mushroom and shrimp paella.
