When in Bacolod: You Must Try NAPOLEONES!

Napoleones is a well-known Bacolod delicacy usually served as a dessert and a popular pasalubong among tourists. Napoleones is a layered puff pastry filled with custard cream and glazed with white sugar sauce on top.

This puff pastry goodness has a very distinct flaky texture followed by a creamy custard filling and enough sweetness coming from the white sugar glaze.

Napoleones is made from just simple basic ingredients such as sugar, eggs, flour, butter and milk.

In fact, you can even find these basic ingredients lying around your kitchen.

The flaky puff pastry consists of just combining 3 ingredients like flour, cold water and chilled butter. However, the trick to its flaky perfection is how the pastry is prepared, kneaded, flattened and sliced to thin layers and baked in the oven with just the right amount of time and temperature. Easy as pie right?

After the puff pastry’s sweet time in the oven, it comes out with a golden crust. Of course, it needs to be rested and cooled completely before it’s filled with a creamy velvety custard that’s made of butter, milk, egg yolks and flour.

Finishing it off is a sugar sauce that is a bit runny when it’s spread on top but turns into a shiny white glaze after a few minutes. And viola! There’s your delectable Napoleones!

Preferably, Napoleones are chilled and best served cold but I wouldn’t mind a mouthful goodness fresh from the oven!

Napoleones can be found in most of the pastry shops all over Bacolod, but Merzci’s Napoleones stood out the most.
